MacNut Crusted Tofu Cutlets
Making a breading out of macadamia nuts produces a flavor that is truely unique.
Ingredients:
1 lb Tofu – firm (cut into 8 cutlet sized pieces)
marinade:
1/4 cup tahini
1 Tbsp. tamari
1/2 tsp onion powder
1 Tbsp nutritional yeast (red Star)
enough water to thin to a slightly creamy consistency
breading:
1/2 cup macadamia nuts – ground fine
1/2 cup whole wheat flour
1/4 tsp. sea salt
Preparation:
In a 400 degree oven, place the cutlets on a baking tray and place in the oven for 25 minutes to dry them out. Remove and allow to cool. In a mixing bowl, combine all the marinade ingredients and make a thin cream. Place the cutlets in the marinade, turning them every few minutes so that they are well covered, and allow to sit for at least 30 minutes. Meanwhile in a separte bowl, combine all the breading ingredients together. When ready, take one of the marinated cutlets and roll it in the breading till it’s totally covered, and then place on a baking pan or tray. Repeat with the other 7 cutlets and place them back into the oven. Allow them to bake until the macadamia nuts are a rich brown color and the smell is fantastic! (about 25-30 minutes) Remove from the oven and serve with or without a dipping sauce.
